If you follow me on Instagram you will know my love for creating in the kitchen.

Cooking is like therapy for me. I zone out when I am in the kitchen. I make the whole thing and experience.

It is my happy place.

My love language is cooking for people.

One of the first things I learnt to make was Crepes. In England, the pancakes we make are very similar to the consistency of Crepes. So this recipe is my easy go to when we have people over for brunch or breakfast.

My children also love these for breakfast (and even sometimes dinner on a Friday night!) They are super simple and sooooooo good!

Easy Crepe Recipe

Ingredients:

2 eggs

2 cups of milk

One cup of flour (you can add more if you like a thicker crepe)

1 teaspoon of vanilla extract

A pinch of salt

Butter for frying

Hot tip! You can place all of the ingredients in the blender to make sure they are mixed evenly and there is no lumps.

  1. Place all of the ingredients in bowl and mix until there is no lumps of flour.

  2. Add butter to a frying pan and coat the edges. Start with a medium heat.

  3. When pan is warm and the butter has melted, pour enough batter to cover the pan but not too thick.

  4. After a few mins the crepe should be peeling at the edges and starting to brown. When you see this happen, flip the crepe with a spatula and do the same to the other side. You can adjust the heat according to how dark you would like to brown the crepe.

  5. Repeat until all the batter is used up.

You can top with anything you like!

Children love Nutella and fruit or simply drizzle your favorite syrup on top.

In England we sprinkle with sugar and squeeze some lemon juice on the top. Sounds strange but I promise you, it is delicious!

Although very simple, this recipe looks so impressive and like you have spent hours in the kitchen.

I have been using this recipe for years and have never had a bad batch.
